Inspiration Day 5: Sticky Date Pudding

  • 1 bag pitted dates
  • 2 1/2 cups water
  • 1/2 teaspoon bicarb soda
  • 120g butter
  • 1 cup self-raising flour
  • 1/4 brown sugar


  1. Heat dates and water – bring to the boil then take off the heat
  2. Add bicarb soda, let sit for 5 minutes, then puree it.
  3. add butter, flour, and sugar. Mix well
  4. pour into tin and bake for 45 minutes


I might be crazy thinking that sticky date pudding is inspiring, but it is amazing! Does anyone else agree?
